My family loves cookies. LOVES them! Out of all the cookies I’ve brought home from various bakeries here in Oklahoma City, these homemade cookies are my family’s favorite. The funniest part? They have a “healthy” twist!
I’ve been making these cookies since I was in high school, and let me tell you, they are so. dang. good. Anyway, let’s stop talking and start baking!
Shake and Bake!
To start, here’s the original recipe card (which has obviously seen a lot of wear and tear over the years).
The ingredients are as follows:
- 1C Packed Brown Sugar
- 3/4 C Butter (the real stuff, not a sub)
- 2 LG. Egg Whites
- 2 tsp Vanilla
- 1 Can Garbanzo beans, drained and rinsed
- 2 C Flour
- 1/2 C Old Fashioned Oats
- 1 tsp Baking Soda
- 1/4 tsp Salt
- Chocolate Chips
Now is the fun part! Mixing!
First, we add the butter and sugar together. Mix it on med/low until fluffy then add the egg whites and vanilla. Not going to lie, I never measure the vanilla because have you ever ran into an instance where there was too much vanilla? Didn’t think so.
Next, we add the dry ingredients and mix those in. SO much yum happening!
Once those ingredients are incorporated, add the beans and chocolate chips. You may need to mix these in by hand because some mixers do not enjoy spinning those things into batter.
Finally, we will put them on a slightly greased cookie sheet 1-2″ apart from each other. I like to do 1 1/2″ balls from a spoon or just by hand. Bake them on the middle rack for 11-13 minutes until done, then transfer to a cooling rack.
Voila! Cookies! “Healthy” cookies with beans! Seriously, these are my family’s favorite. They BEG for them, and they don’t even know they’re eating cookies that have beans in them. I promise you won’t either.
